Easy and comforting, especially on a cold night.

Yield: 4 servings

Ingredients

  • 6 cups low-sodium vegetable broth
  • 1 medium yellow onion, diced
  • 1-2 carrots, diced
  • 1-2 celery ribs, diced
  • 2 tablespoons olive oil
  • salt and pepper
  • 1 cup pastina or any tiny pasta variety, like alphabet, orzo, or acini di pepe
  • Grated Parmesan cheese, for serving

Instructions

  1. Fry the vegetables in the olive oil on medium heat with some and pepper to taste, about 7 minutes
  2. Add the broth, simmer for 15 minutes on medium heat.
  3. Turn off the heat, and puree the soup with a hand blender until mostly uniform with only a small amount chunkiness remaining. Add some more salt to taste.
  4. Add the pasta, raise temperature to medium high, cook for about 10-15 minutes.
  5. Ladle into bowls, sprinkle with cheese.
