Easy and comforting, especially on a cold night.
Yield: 4 servings
Ingredients
- 6 cups low-sodium vegetable broth
- 1 medium yellow onion, diced
- 1-2 carrots, diced
- 1-2 celery ribs, diced
- 2 tablespoons olive oil
- salt and pepper
- 1 cup pastina or any tiny pasta variety, like alphabet, orzo, or acini di pepe
- Grated Parmesan cheese, for serving
Instructions
- Fry the vegetables in the olive oil on medium heat with some and pepper to taste, about 7 minutes
- Add the broth, simmer for 15 minutes on medium heat.
- Turn off the heat, and puree the soup with a hand blender until mostly uniform with only a small amount chunkiness remaining. Add some more salt to taste.
- Add the pasta, raise temperature to medium high, cook for about 10-15 minutes.
- Ladle into bowls, sprinkle with cheese.
